Harvest: Selected and overripe grapes harvested by hand and placed in small crates in the second ten days of October.
Vinification: Fermentation (20-25 days) at a controlled temperature (22-28 °) in French oak vats, with daily manual breaking of the cap, malolactic fermentation and elevation in French oak barrels mainly of second passage for 18-24.
Refining in bottle for 6 months.
Organoleptic examination
Intense dark red color.
Aromas at the beginning of ripe marasca cherry or sour cherry (typical descriptor of the Montepulciano grape) little jam, undergrowth, mushrooms, leather, continuing hints of spices, roasted coffee, licorice, smoke and tobacco.
In the mouth good volume with soft evolved tannins, slightly bitter and astringent but not dry in the finish, persistent in the mouth.
Pairing: spicy fish soups such as stockfish all'anconetana, elaborate meat-based dishes, stews, game, pecorino di fossa.
