Harvest period: II-III decade of September, After a careful selection, the grapes are harvested, destemmed and crushed.
Harvest period: II-III ten days of September; the grapes are harvested exclusively in the vineyards surrounding the company and immediately cooled.
After about two days at a temperature of five degrees centigrade, the soft pressing takes place and the free-run must is fermented in stainless steel vats at controlled temperatures for about twenty days.
A few months of aging on its own lees in post fermentation gives importance, structure but above all aromatic complexity.
Organoleptic examination
Straw yellow in color with golden-green reflections.
Intense, enveloping and pleasant aroma.
Fine, elegant and harmonious. A bouquet of citrus, exotic fruit, white flowers and the classic smell of anise. Minerality and flavor are the masters.
Pairings: Ideal with all types of fish, especially raw fish. Excellent with cheeses.
