Marro Rosso Conero DOC with malolactic fermentation in large wooden barrels
Red wine with body and structure, suitable for a long storage in bottle.
The vineyards, with over 25 years of activity, are characterized by a low yield per vine equal to 60 ql. grapes per hectare. The calcareous-clayey nature of the soil limits the vegetative development, anticipating ripening in the hot-dry climate seasons.
Vinification - The grapes have reached maturity and are harvested manually, crushed and destemmed. Fermentation takes place at a temperature between 30 ° C and 32 ° C.
The maceration of the must-wine with the pomace lasts for 15 days with daily pumping over.
Aging - After racking, the malolactic fermentation is carried out in large wooden barrels of 25 hl.
In mid-January the wine is racked again into large wooden barrels where it matures until the beginning of June when it is bottled.
Purple wine with violet hues. Aromas of blackberry and plum, with a touch of vanilla on the bottom. Very versatile with combinations for everyday cooking.
