From grapes grown entirely under the organic conversion regime in the Palombare vineyard, in Sasso di Serra San Quirico.
Hand picked in crates
Vinification: refrigeration of the grapes, soft pressing with removal of only the flower must, cold static decantation, fermentation at 16/18° with the use of indigenous yeasts (for a part of the mass)
Aging on the lees in steel and cement with frequent batonnage for 7 months and then at least 2 months in the bottle.
Organoleptic test
The fresh and floral scents blend with pleasant mineral nuances that return to the palate with marked sapidity and richness, which invite you to take another sip.
An ideal wine to accompany spring aperitifs with friends and dinners based on fresh fish!
Palombare, our first wine, coming from the Sasso di Serra San Quirico cru, obtained from an old vineyard which half was planted in 1955 and the remaining half was expanded in 1991 and which is cultivated under the organic conversion regime .
