Vertical MIRUM magnum Verdicchio di Matelica DOCG vintages 2018-2019-2020
A nectar, by its very nature, will never be a summer wine. Wine of high lineage, destined to be produced only in the great vintages. Aging up to 10 years

Location: municipality of Matelica in Contrada Monacesca - Altimetry of the plant: about 400 m. above sea level
Harvest: hand harvested in the third ten days of October
Vinification: grapes left to slightly overripe on the vine for about two weeks, and immediate soft pressing without the use of sulfur dioxide; fermentation in steel for about 20 days at 20°C, resting on the fine lees until the following spring, natural triggering of the malolactic fermentation in early summer
Aging: eighteen months in steel and six months in the bottle, to be marketed two years after the harvest, with official release on December 1st, as per the production disciplinary
Organoleptic examination
The slight over-ripening of the Verdicchio grapes allows for an extraordinary starting material which is expressed, after the long refinement, with a great olfactory complexity: ample hints of toasted almonds, citron, honey and bread crust which in the evolutionary phase surprise for the still greater expressiveness
In the mouth it is an explosion of power and balance, very long and deep, rich and opulent
Pairings: wine for unseasoned cheeses, smoked appetizers and white meats with sauces
