It is not eaten only in summer, it is no longer a childish food. Exactly as chocolate is constantly looking for and it demands more and more, a continuous emotion. It is clear that many professionals like me have started a sort of gender battle for ice cream, a real exploration in search of raw materials of excellence, healthy combinations, elimination of the superfluous for a cleaner as possible. This clearly leads to the revaluation of costs, to the downsizing of now overcome concepts that led to think that a ice cream shop, which, even chocolate, can be created and maintained with an economic outlay contained. It is not so, absolutely not. We do the best and use the best and to do it it takes investments, research, honesty and time. Good things make a certain noise, as we show you in these pages, emit a certain sound, awaken memories and have a much higher price than foods from industrial chains.
