Ca'Liptra is a small company in the wine world founded in 2012.
The caliptra is an apparatus of the flower of the vine which, like a cap, protects and encloses the inflorescence until flowering and then detaches from the flower.
The company conducts old recovered and partly renewed vineyards in organic farming.
They have different exposures, soils, altitudes - between 200 and 400 meters above sea level - and an average age of about 40 years.
Given their age, it is very important to manage the vineyard in order to guarantee the right balance between production and survival of the plants.
The vines are covered with grass and are treated exclusively with copper and sulfur, avoiding any intervention with synthetic products.
No fertilizations are carried out and green manure is practiced. The work in the countryside follows the rhythm of the seasons, is carried out manually and, during the harvest, the grapes are harvested in small boxes.
The enhancement and respect for the territory are at the heart of the company's objectives, which delight in experimenting with new methods of vinification of musts and aging of wines.
Fermentations are spontaneous, without the addition of adjuvants and / or additives. In addition, no invasive techniques are used.
All the parcels are vinified separately, to understand even more in depth the characteristics of each individual terroir and with the specific purpose of creating a wide variability, altimetric, pedological and microclimatic.
The wine rests on the lees at the end of fermentation until its complete maturity, refining in concrete and steel tanks or in small wooden containers such as barrique and tonneau.
