We started from home cooking where every recipe on the table starts from raw materials that bring with them the culture and taste of the Marche region.

We focused on the plants we had in the company trying to deepen their knowledge, looking at them with new eyes. We discovered that each of them had a hidden flavor and we started looking around for all the varieties that represent us.

According to grandmother, the olive is harvested when it is ripe "safe after the dead", in front of a bonfire and is kept in the room until December before taking it to the "friscolo".
