We wanted to stay true to tradition by setting up the Company according to the canons,

the criteria and the processing technique handed down to this day, starting from the name itself;

Caonà in fact was the nickname of the Quarchioni Family, today owner of the winery,

who with commitment and dedication carries on this family passion.

Cooked wine is a prestigious drink obtained by crushing and pressing grapes, the must, which is placed in copper boilers and boiled slowly over direct heat for about 10-12 hours, during cooking produces a foam (due mostly to the denaturation of proteins and hydrolysis of pectins) which is gradually eliminated, until a reduction of 50% of its volume.

Once cooked, the decanted but still hot must is first transferred into chestnut or oak barrels, then the fermentation is completed in ancient oak barrels and it is left to age for a period of no less than five years.

The Caonà Farm is located in a charming and characteristic medieval village: Loro Piceno, which enjoys an excellent geographical position, halfway between the Adriatic coast and the Sibillini mountains.

The hilly territory and the mild climate enhance the quality of the wine, but above all we owe to this village the ancient tradition of Vino Cotto.

This has in fact been handed down from generation to generation and the art of harvesting in these hills is the combination of work, experience and passion.

The annual event that in the month of August is the symbol of this municipality is in fact the Sagra del Vino Cotto which today exceeds its 40th edition.
