Harvest: manual and selected harvesting of the bunches from the second ten days of September for Sangiovese and the second ten days of October for Montepulciano, harvest time defined with 4-parameter ripening curves (sugars, total acidity, pH, polyphenols).

Vinification: with maceration for 15 days, 5 punchings/day, must yield 65 l / 100 kg grapes, fermentation

thermoconditioned at 25°C, inoculated with selected yeasts.

Maturation: Stainless steel - Bottling: cold

Aging: 9 months - Volatile acidity 0.71 g/l - Total acidity 5.1 g/l - Total sulfur 92 mg/l - Free sulfur 14 mg/l ph 3.4

Sensory profile

Ruby red with purple reflections,

fruity nose of red fruits and floral notes of rose, vanilla, spices,

great structure in the mouth, savory, complex.
