Snails have always been eaten: if they are niche it is only because the habit of eating them has been somewhat lost, certainly not for the cost of the product.

Marco Midei a great passion that was born with the family: his grandfather took him to look for and collect snails when he was little.

The habit was lost, probably, because the purging and cooking times are long, but the goal is to make snails return to the center of the culinary tradition as it once was.

The snails are raised in enclosures made up of the specific anti-burr, anti-escape and resistant to ultra violet rays of the sun helitex net, completely immersed in the green of the local mountains.

After sowing the chard and clover and waiting for their growth (at least 10 cm), in the spring season the snails are placed inside the fences; these after a few days will begin to mate, to lay the eggs, and in substance to conduct their life cycle.

To ensure their best living conditions and respect for the safety of the environment, only natural methods and foods are used every day, such as fresh seasonal fruit and vegetables, obviously always after watering when the sun goes down. the snails will have reached the adult age, that is when they will have the visible border on the shell.

Before being sold or processed, the snails are purged in ventilated boxes for at least 10 days, thus respecting health and hygiene regulations and guaranteeing consumers a high quality product.
