Oil with a medium/light fruitiness, good spicy and little or no bitterness, with a particularly pleasant fruitiness of tomato, tomato leaf, red fruits.
Persistent and perfect on fish, white meats and slightly matured cheeses. Also excellent on steamed vegetables.
Area of Origin: Company-owned olive groves located in the municipality of Senigallia (AN), Marche
Olive grove altitude: 70-80 meters above sea level - Harvest period: October-November - Harvesting method: Hand-picked / Facilitated Extraction system: Company-owned eco-system mill, continuous cycle with a two-phase cold press in a controlled atmosphere, without a vertical-axis centrifuge, within 4 hours of harvest.
Filtration performed immediately after extraction. Storage in stainless steel tanks under inert gas at a controlled temperature.
Glass bottles with anti-refill caps and anti-oil labels are available in 0.5-liter and 3-liter bag-in-box formats.
