Soil: hilly, medium texture tending to clayey.
Density of vines per hectare: 4000 - Training system: guyot.
Average production per hectare: 80 quintals.
Soil management: natural grassing in the inter-row and mechanical processing in the under-row. Management method: integrated defense.
Harvest: first ten days of September, manual harvesting, transport in crates and manual selection of bunches.
Vinification: cold decantation of the must and fermentation of the base wine at a controlled temperature.
Second fermentation and refinement on fine lees in autoclave for over 4 months. Maturation: Charmat method for 6 months.
Organoleptic description:
pale straw yellow, fine and persistent perlage.
Intense on the nose with floral notes of acacia with very delicate fruity notes (citrus) accompanied by evident notes of bread crust.
Certainly equipped with an acidic shoulder that gives freshness and persistence to the palate. Pairings: ideal as an aperitif that is well suited to all convivial occasions.
It can also be used throughout the meal with fish-based dishes or with white meats and not too mature cheeses.
