Row orientation: south/east-north/west. - Altitude above sea level: 182m.
Soil: hilly, medium texture tending towards clayey.
Density of vines per hectare: 4000 - Training system: guyot.
Average production per hectare: 80 quintals.
Soil management: natural grassing in the inter-row and mechanical processing in the under-row. Management method: integrated defense.
Harvest: September, manual harvesting, transport in crates and manual selection of the bunches.
Vinification: cleaning of the must by cold decantation and fermentation for 10 days at a controlled temperature.
Maturation: 24 months in steel and 24 months in barriques.
Refinement: at least 6 months of refinement in the bottle.
Organoleptic description:
pale straw yellow color.
The nose perceives intense floral notes, exotic fruits and aromatic herbs. A wine with a vanilla flavor.
The freshness of the wine stands out in the mouth, with a certain persistence that gives a pleasant and rich retro-olfactory sensation.
Pairings: in the kitchen it can be paired with fish and meat appetizers but also with first courses with a certain succulence. Perfect to accompany dishes based on dried fruit. By virtue of its aromatic profile it can also be indicated for the various types of spicy ethnic cuisine.
