Territory: Marche – Macerata - Locality Cimarella - Year of planting of the vineyards 2011.
Row orientation: south/east-north/west - Altitude above sea level: 182m.
Terrain: hilly, medium texture tending towards clayey. Density of vines per hectare: 4000.
Training system: guyot. Average production per hectare: 80 quintals
Soil management: natural grassing in the inter-row and mechanical processing in the under-row.
Management method: conventional – integrated defense.
Harvest time: September, after careful monitoring of the evolution of Sugars, Total Acidity and pH, Bins mode.
Vinification: manual harvesting and manual selection in small containers, maceration on the skins for 10 days and daily punching down alternating with délestage.
Fermentation in 75 hl steel tanks. Maturation: 6 months in steel.
Aging: at least 6 months of aging in bottle.
Organoleptic description:
intense ruby red color.
On the nose it is intense with floral notes with delicate hints of rose, accompanied by fruity notes that recall the fruits of the undergrowth and ripe cherry.
On the palate it is savory, rightly tannic, ready to drink. It should be appreciated young, but can also be appreciated with a few years of age.
Pairings: thanks to its balance this wine lends itself to multiple pairings such as first courses with meat sauces, grilled meat or with stews.
