Soil: hilly, medium texture tending towards clayey.
Density of vines per hectare: 4000 - Training system: guyot.
Average production per hectare: 70 quintals.
Soil management: natural grassing in the inter-row and mechanical processing in the under-row. Management method: integrated defense.
Harvest: August, manual harvesting, transport in crates and manual selection of the bunches.
Vinification: cleaning of the must by cold decantation and fermentation for 15 days at a controlled temperature.
Organoleptic description:
bright and lively straw yellow, with excellent consistency.
The nose perceives an important intensity and aromatic complexity attributable to exotic fruit supported by floral sensations of acacia flowers.
Definitely a complex wine in the mouth, persistent, with valid alcoholic support. Pairings: versatile wine that can be paired with all the main fish-based dishes. Thanks to its good alcohol content, it can accompany baked or grilled white fish.
It is also excellent paired with meats such as poultry and rabbit, elaborate meats, or with mature cheeses.
