A unique wine in the world, a blend of Sangiovese vinified in white and Merlot vinified in white, aged in fine-grained French oak.

Nature of the soil: deep, medium-textured, tending towards calcareous Position: hilly Exposure: south – east; east – west Training system: espalier, spurred cordon shape.
Harvest: manual and selected harvest of the bunches in the first week of September, harvest time defined with 4-parameter ripening curves (sugars, total acidity, pH, polyphenols).
Vinification: in white: pneumatic press at 0.2 atm max, must yield 45 l / 100 kg grapes, thermo-conditioned fermentation at 14°C after static cleaning of the musts and inoculation of selected yeasts.
Maturation: in 5 hl fine-grained oak tonneau, toasting studied for special whites Origin Allier permanence for 12 months Bottling: cold
Aging: 6 months fine-grained French oak
Sensory profile:
paper white with straw-yellow reflections,
intense nose of floral, chamomile, yellow flowers and fruity of yellow apple and ripe pear; in the mouth ample, savoury, creamy, fragrant, rich well-harmonized acidic heritage, good structure, long aftertaste very complex and rich in tertiary.
Pairings: aged cheeses, roast fish, tartare and carpaccio, savoury traditional dishes excellent as a meditation wine.
