Vinification: manual harvest, maceration on the skins at 10 ° C for 5 days, fermentation with manual punching and pumping over for about 8 days. Racking and malolactic fermentation. Racking and batonnage for the next 2 months.
Aging: 18 months about half of the mass ages in large oak barrels, the other half in steel vats.
Organoleptic examination
Intense ruby red with violet reflections.
Complex, intense with fruity hints of morello cherry, plum and leather.
In the mouth it is intense and persistent, soft and sincere tannins. Long and sweet on the finish.
Pairing: Excellent with meat first courses, medium-aged cheeses, roasts and game.
