Harvest entirely by hand
Vinification: The grapes are harvested in the very early hours of the morning and immediately brought to the cellar.
Soft, direct pressing of the whole bunch, no maceration on the skins. Spontaneous fermentation with indigenous yeasts in stainless steel. Aged for approximately 6 months on its fine lees in stainless steel until bottling.
Sensory Analysis
Antique pink in color
Complex and iodized. Wild berries, wild rose, thyme.
Lively and savory flavor. Mineral and savory, thanks to the Adriatic temperament.
Pairings: Shellfish, mollusks, and baked fish. Excellent with traditional Ancona-style stockfish.
