A doubly satisfying wine! Because the grapes for these sparkling wines were hand-picked by the young people of Orto di Paolo, a day center for people with autism, to which all proceeds go.
But the label was also designed with the young people, who have become the true protagonists of their work.
First Harvest: 2007
Production Area: Estate-owned vineyards located in the municipalities of Offida and Ascoli Piceno
Average Altitude: 200-300 m above sea level - Soil: Medium texture, tending towards sandy. Training System: Guyot
Harvest: The grapes are harvested by hand. The bunches are placed in crates of approximately 20 kg. - Contains sulfites.
Fermentation: Selection of Passerina grapes harvested at the best time for the production of the sparkling base wine.
After a brief cold maceration of the grapes and gentle pressing, fermentation begins under temperature control in stainless steel.
After the initial fermentation, the base wine is prepared for secondary fermentation in an autoclave with secondary fermentation (Charmat Method). The production cycle is never less than 90 days to allow for adequate maturation on the lees after secondary fermentation, which characterizes the sparkling wine.
Bright yellow with silver reflections. Fine and persistent perlage.
Intense and elegant nuances of white fruit and citron with very fine floral and fragrant notes of acacia blossom. Freshness and savory character are evident. Intense aromas of white flowers, delicate notes of pome fruit, and lively citrus sensations are pleasantly contrasted by the softness and tantalizing sparkle. Excellent persistence with a pleasing harmony between the palate and the nose.
From the wine we learned patience, waiting for the time needed to obtain intense sips, with an incomparable flavor.
