Harvest period : III week of Sectember
Vinification: Maceration on the skins for 25 days .
Alcoholic fermentation: In stainless steel tanks at controlled temperatures
Malolactic fermentation: Completely carried out in large wooden barrels
Aging and aging: For 10-12 months in large Italian oak barrels, then 16 months in bottle
Organoleptic examination
It has an intense ruby red color
Vinous on the nose with hints of cherry and black pepper.
Very fruity in the mouth, harmonious with soft tannins, fresh with a delicately spicy aftertaste.
Pairings: It combines divinely with savory first courses and baked pasta (Vincisgrassi), ciauscolo and fresh salami in general, fresh and medium-aged cheeses, grilled meat, saltimbocca and rabbit in porchetta.
