Vineyards owned by the Ascoli Piceno and Ripatransone estates.
Varieties: Chardonnay, Passerina, Sauvignon.
Average altitude: 200-300 meters above sea level - Soil: Medium texture, tending towards sandy. Guyot pruning.
Harvest: Harvested in early August for the Chardonnay and Sauvignon, in the first ten days of September for the Passerina. This early harvest allows us to achieve freshness in the final wine.
Fermentation: The grape varieties used in this wine are vinified separately. Harvesting begins in early August for the Chardonnay and Sauvignon, very early in the morning to avoid bringing the hot grapes to the cellar.
The Passerina is harvested in the first ten days of September.
The vineyards used to produce this wine were selected for their very cool exposure.
Process: Fermentation in stainless steel at a controlled temperature for approximately 15 days. Once fermentation is complete, the wines are blended to begin a long aging process at a temperature of 3°C (37°F), which helps maintain the natural CO2 within the wine, giving it its distinctive sparkle.
