Sixty months of aging on the lees, a sparkling wine of pure passion. Complexity and elegance distinguish this classic method, enhancing its unique character. Its marked freshness makes it long-lived and vibrant, giving it absolute finesse.
Contains sulphites
Clay-limestone soil, located at 450 meters above sea level with North-West exposure
Training system: Guyot with planting density of 4000 plants/ha
Harvest: End of August/beginning of September, manual, selection of grapes collected in 25 kg boxes
Vinification: Soft pressing of whole bunches immediately after harvest, with a low grape/must yield, cold static defecation, then alcoholic fermentation begins in second passage barriques. Malolactic fermentation can be carried out, depending on the vintage. The dry base wine is then assembled and stored until the following spring.
Second fermentation: The base wine is added with yeasts and refined cane sugar, bottled and, closed with a crown cap, undergoes refermentation. The bottles are kept horizontally for 60 months in contact with their own fermentation yeasts.
Disgorging: The refermentation yeasts are expelled from the sparkling wine after which no liqueur d’expédition is added for this Dosaggio Zero.
Post-disgorging aging: 2 months.
Its great ability is to summarize in the glass the refinement of its origins and the rather hard and closed nature typical of those who do not give themselves over to everyone and typical of the Marche region.
In short, a wine of elegant finesse and at the same time of great character.
