Vinification area: Stacciola, Marche (PU). - Soil type: medium texture – clayey.
Harvest period: first ten days of October
Harvest method: Grapes are harvested by hand in small crates, selected in the vineyard through thinning and various harvesting phases.
Vinification: Immediately upon arrival at the winery, the bunches are destemmed. The whole berries are placed in steel vats, where punching down and pumping over give the fermenting mass its characteristic color. Fermentation takes place at a controlled temperature.
Aging: 4-5 months in steel vats, 12 months in oak barrels.
Tasting notes
Clear, ruby red tending towards garnet, consistent.
Red, pink, and faded violet flowers; Notes of red berries, cherry jam, and ripe plums, along with small red fruits. Spicy notes of vanilla, pepper, woodsy notes, tobacco, and licorice.
Dry, warm, with a great enveloping softness contrasted by silky tannins, good freshness, and savory flavors.
Pairings: It pairs perfectly with even complex meat dishes, stews, and braised meats.
Game, both feathered and game. Perfect with aged cheeses and local cured meats.
