Production area: Stacciola, Marche, PU - Soil type: medium texture – clayey.
Harvest period: last ten days of September
Harvest method: grapes harvested by hand in small crates, selection of the grapes in the vineyard by thinning.
Vinification: soft pressing of the whole bunches, cold static decantation of the must. Temperature-controlled fermentation in stainless steel. Aged on the fine lees.
Aging: in small oak barrels for 12 months. Aged in bottle for 3 months.
Sensory evaluation
Crystalline, golden yellow
Flowers and yellow-fleshed fruit of good intensity; spicy notes, especially vanilla.
Dry, warm, soft, with good freshness and flavor.
Pairings: pairs well with even complex meat and fish dishes; It also goes perfectly with local cured meats and cheeses, even mature ones.
