Vinification: Cryomaceration of the grapes, ultra-gentle and rapid pressing, fermentation at a very low temperature throughout the entire period to enhance the delicate fragrance and aroma of this wine.
Aging: On the lees in concrete tanks for 8 months, 5 months in stainless steel tanks, 4 months in bottle.
Tasting Notes
Intense yellow with golden highlights
Immediate aromas of citrus, melon, and exotic fruit on the nose, followed by notes of oregano and rosemary, before offering a delightful mineral finish. It evolves in the glass, revealing great complexity.
A smooth, structured palate, rounded yet pleasantly savory and harmonious with a fresh acidity. These characteristics make it excellent to drink and offer a unique balance.
Pairings: Fish-based dishes. Baked fish, especially white meats, rabbit, and hare.
