Spumante Verdicchio Metodo Classico Dosaggio Zero Peruzzi
Obtained from native organic Verdicchio grapes from the central area of the Marche.
The production is deliberately limited so as not to lose quality.
Total sulphites (antioxidants): less than 50mg/lt including the part that the wine naturally produces during fermentation.
Vineyards in Monte Roberto, immersed in the natural ecosystem created only by the changing seasons.
Vines over 40 years old on clayey-calcareous soil on a hill facing south-east.
Harvest: scrupulous cleaning of the bunches at harvest, their pressing within the day and the aid of a cooling system.
Vinification: Dosaggio Zero, no sugars or anything else are added after fermentation.
The pressure of the bubbles is kept lower than usual, at 5.0 bar, to leave it more delicate. The residual sugar is 0.6gr. per liter.
Maturation is 40 months on the lees in the bottle.
Organoleptic examination
The color is pale straw yellow, greenish when held up to the light.
Abundant foam and a very fine perlage.
The flavor of Spumante Verdicchio is dry, harmonious, with a pleasantly bitterish aftertaste, the smell is delicate and characteristic with a pleasant hint of bitter almond.
Food pairings: It is best with seafood, fish, crustaceans and molluscs. Excellent with white meat dishes, even with sauce. Particularly suitable for fried meat, fish or vegetables.
After the second fermentation, the bottles lie for at least three years in the underground cellar where the low temperature allows for optimal refinement, until the maturation of the wine, which in this time is charged with the liveliness that you will find sparkling in your glasses ..... Health !
