The FOCARA Pinot Noir is produced with a traditional red vinification, then aged in barriques for 12 months.
The Focara area has distinguished itself over the years for the production of Pinot Noir with a strong personality and with the typical characteristics of this variety.
The quality and history of this wine earned it the recognition of the DOC Colli Pesaresi Focara Pinot Noir in 2000.
The Pinot Noir from the Rive Monte vineyard is bottled separately with its own Rive label.

Soil: silty, deep, calcareous, high sandy component
Period: late August - early September, manual harvest in 15Kg grid crates
Cooling of the crates in the vineyard via mobile cold storage
Grape transport: in crates - in mobile cold storage equipped with independent motor: the grapes are cooled as soon as they are picked thanks to the mobile cold storage placed in the vineyard early in the morning and collected by the tractor at 6:00 pm every day.
Destemming and crushing is carried out the following morning at a temperature of the bunches of about 9°C.
Vinification: Cold pre-fermentation maceration for about 7 days Fermentation in tank with delestage and pumping over and punching down for about 15 days fermentation at controlled temperature (max 30°C)
12 months in barriques on the lees - monthly batonage - 228 L French barriques (50% new, 50% 2nd passage)
Bottling without filtration minimum 11 months in bottle before marketing.
