Vinification area: Stacciola. Marche (PU). - Soil type: medium texture – clayey.
Harvest period: first ten days of October
Harvest method: grapes harvested by hand in small crates, selection of grapes in the vineyard by thinning and various harvesting phases.
Winery: immediately after arriving at the winery, the bunches are immediately destemmed. The still whole grapes are placed in steel vats, where, through punching down and pumping over, they give the fermenting mass its characteristic color. Fermentation takes place at a controlled temperature.
Aging: 4/5 months in steel vats, 12 months in oak barrels.
Organoleptic notes
Clear, Ruby red tending towards garnet, consistent.
Red flowers, pink and faded violet; notes of red berries, cherry jam and ripe plum, small red fruits. Spicy notes of vanilla, pepper, wood, tobacco and licorice.
Dry, warm, with great enveloping softness contrasted by silky tannins, good freshness and flavor.
Pairings: It goes perfectly with even complex meat preparations, stews, braised meats. Game of feathers. Perfect with mature cheeses and local cured meats.
