Medium textured soil - Training system: guyot
Harvest: end of October, bunches harvested by hand in small boxes.
Vinification: spontaneous and complete mono-lactic fermentation,
Maturation: Tonneaux for about six months with weekly battonage
Aging: In bottle for 4 to 6 months

Deep ruby red color with purple reflections
Aroma: It gives an intense bouquet from which immediately emerges a beautiful ripe fruitiness of morello cherry, plum, blackberry and excellent sensations of black cherry jam on a spicy background of black pepper and vanilla.
Flavour: On the palate it is warm, soft and enveloping with well-polished tannins, the finish is dry and elegant until a closure of impeccable persistence and extraordinary body.
Pairing: Game birds, mature cheeses, rare red meats or structured second courses.
