The intense scents that make up the very rich bouquet of this label stand out on the nose: plum, cherry, berries, violet, undergrowth, tobacco and leather.
The character of this wine is clear and evident from the first sip: juicy, structured and with lively tannins, it gives the palate persistent and warm sensations.
Pairing: Appetizers with typical cured meats and aged cheeses, grilled or braised red meats and game.
My grandparents and my father made their own peasant wine in times without professional winemakers.
Could I have interrupted the tradition? Never!
This is Valter Mattoni's answer to those who ask him why he spends so much time locked in the cellar, a prisoner of his small and passionate production.
