Organoleptic notes
Intense but lively straw yellow color,
accompanied by a rich and harmonious bouquet that brings notes of flowers, tropical fruit, medicinal herbs and honey.
Fresh and persistent nature that is expressed in a medium-structured fresh and savoury sip.
It pairs well with fish or white meat dishes.
My grandparents and my father made their own peasant wine in times without professional winemakers.
Could I have interrupted the tradition? Never!
This is Valter Mattoni's answer to those who ask him why he spends so much time locked in the cellar, a prisoner of his small and passionate production.
