Production area: Carassai, Val Menocchia, halfway up the hill on the south/west side (200 m above sea level).
Soil: alluvial base characterised by sand and a lot of silt, with an alkaline reaction due to the presence of limestone, with clay in depth.
Training system: espalier rows, with Guyot pruning.
Harvest period: end of September.
Harvest: grapes harvested by hand in small crates exclusively in the early hours of the morning at a temperature between 12°C and 15°C to preserve the characteristic aromatic profile. The grapes are immediately transported to the cellar and processed.
Alcoholic fermentation: in stainless steel at a temperature of 18°C for approximately 15 days.
Aging: in steel on the fine lees until bottling in April, 3 months in the bottle.
Alcohol: 12.5% Vol. Ph: 3.3 Total acidity: 6.5 gr/l (tartaric acid) - Dry extract: 23.5 gr/l
Organoleptic qualities
A Passerina that reads the freshness of the grape variety well but does not give up leaving a sign of its passage in the mouth.
Florality and flavor at the service of enjoyment in the glass.
An excellent companion for fish dishes, seafood, delicate first courses and white meats.
It is also an excellent choice as an aperitif, thanks to its ability to stimulate the appetite.
