Production area: Carassai, Val Menocchia, halfway up the hill on the southern slope (100 m above sea level).
Soil: alluvial base characterized by sand and a lot of silt, with an alkaline reaction due to the presence of limestone, with clay in depth.
Training system: espalier rows, with Guyot pruning. - Density of vines: 3000 per Ha
Harvest period: end of September Sangiovese, beginning of October Montepulciano.
Harvest: by hand with grapes collected in small crates.
Alcoholic fermentation: in stainless steel at a temperature between 25°C and 27°C for 10 days.
Maturation: 12 months in tonneau and third passage French oak barriques. - Aging: 6 months in bottle.
Alcohol: 12/13% Vol. - Ph: 3.3 - Total acidity: 6.5 gr/l (tartaric acid) - Dry extract: 29.5 gr/l
