Production area: Selected vineyards owned by Ascoli Piceno and Ripatransone
Average altitude: 200-300 meters above sea level
Soil type: medium mixture tending to sandy
Harvest: Harvest by hand, early in the morning or in the late afternoon, in small boxes
Fermentation: Careful selection of the grapes that allows to dedicate only the best bunches to this wine. The selected grapes are harvested at the end of September and a cryomaceration is carried out.
After soft pressing, the grapes are separated from the skins. The must obtained is conditioned at a temperature of 5 ° C. Decanted to obtain a clear must, it is then fermented at controlled temperatures.
For the entire time of refinement in steel, until about February, the wine rests at a temperature of about 10 ° C to preserve the aromatic heritage intact.
Sensory examination
Brilliant straw yellow.
Intense and clear bouquet of fruit, peach, pineapple and acacia flowers.
Fresh and fragrant, it confirms the characteristic aromas of the grape. Elegant, pleasant in its remarkable structure and marked acidity.
