Harvest period: early September, grapes harvested by hand in small crates
Vinification: Soft pressing, cold static decantation of the must and fermentation at a controlled temperature with selected yeasts. Refermentation in the bottle for 24 months.
Organoleptic characteristics
Bright straw yellow color with golden reflections.
Perlage of very fine bubbles, numerous and persistent.
On the nose it opens with fruity notes accompanied by aromas of bread making.
In the mouth it is fresh and delicate.
