Period and type of harvest: Last week of October, manual harvest with selection on the vine of the best bunches for integrity and ripeness
Vinification and refinement: Destemming and pressing with maceration of the must and with 3 daily punching down in temperature-controlled steel vats. Fermentation over 14 days. Racking, subsequent malolactic fermentation.
At the end of January, transfer to second passage Allier Troncais oak barriques for 12 months. At the end, transfer to steel tanks for 3 months and subsequent bottling.

It is the vintage wine of the company, a synthesis of the care and selection of the best bunches in the vineyard.
Floral hints of lime and honey. Followed by notes of yellow plum and avocado.
On the palate, sapidity and softness stand out, with nuances of honeyed notes in the finish.
Pairings: Hard cheeses with long aging, red meats.
Serve in thin crystal glasses with ample volume.
Storage advice: Always store the bottle horizontally, in the dark, in a dry place, without significant temperature changes.
