Serra de' Conti grass peas are one of the oldest and most characteristic legumes in the Marche region. Grown for generations in the hills surrounding the village of Serra de' Conti, they are a precious, rustic food with a strong flavor.

Soak for 24 hours, changing the water at least twice. Rinse well and cook in fresh water.
