Chickpeas, a dried legume typical of the Marche region, are grown naturally.
They are characterized by their rather small, golden berries. Their flavor and saltiness make them ideal for simple recipes, such as making tasty soups with garlic and rosemary using a portion of the soaking water, or for making flavorful purées for meat stews. They are also used with pasta, as a side dish, or in purees.
In the Marche region, they are typically cooked with garlic, bay leaves, and tomatoes, adding extra virgin olive oil and a little salt when almost cooked.
