Il corbù is a work of wine art created from the harmonious union of 80% Montepulciano and 20% Cabernet grapes, which enchants with its authenticity and craftsmanship.
The estate, rigorously managed organically, is located at about 280 meters above sea level, in an area whose subsoil is mainly composed of clay and limestone.
In the vineyard and in the cellar the only intervention allowed is that of the human hand. During cultivation only very low doses of copper and sulfur are allowed, while in the cellar filtration and clarification practices are abolished as well as the use of added yeasts.
The bunches are harvested and destemmed manually and then immediately move on to carry out spontaneous fermentation in steel with only indigenous yeasts.
The aging period of this wine is divided into two phases: for the first 10 months it is aged in barriques, while for the following 6/8 months, the wine is moved to steel tanks.

with a complex and very fragrant bouquet that recalls notes of cherry, small berries, black pepper and salty puffs.
The sip immediately hits the palate with its strong tannic texture and then opens towards sensations of freshness and pleasant flavor.
A perfect wine to sip next to rich platters of mixed cured meats or as an accompaniment to first and second courses based on red meat.
