2016 Vintage: The harvest began on August 22nd, and throughout the harvest period, we enjoyed favorable weather, making this an important vintage for Franciacorta.
A special grape washing and hydromassage system is used, using three soaking tanks and a complete drying system. For destemming, the grapes are transferred over the vat and then fall into the vat by gravity. This eliminates traditional pumping systems, which cause skin breakage and unwanted herbaceous notes.
This is followed by a brief maceration of the grapes at a temperature of 14°C to achieve the distinctive intense pink color and the extremely refined and harmonious aromatic profile that characterize the bottled Annamaria Clementi Rosé. All the vinification stages of the various base wines take place in small oak barrels made from selected woods, aged for at least three years, and stored in deep, cool underground cellars.
Alcoholic fermentation, malolactic fermentation, and barrel aging last a total of eight months. At least another eight years of aging on the lees is required to achieve the aromatic harmony and excellent flavor balance.
Dégorgement in the absence of oxygen makes the Franciacortas purer, more pleasant, and longer-lived.

It has a salmon pink color, with fine, persistent bubbles.
The bouquet is broad and enveloping, with aromas reminiscent of biscuits, sugared almonds, candied cherries, marzipan, and hazelnut.
