An opportunity not to be missed. There are grapes that promise to be beautiful: it happens when nature, the terroir, and the sun align in a special and perhaps unrepeatable vintage. And then one can only accept the challenge of perfection.
This is how IlMerlot is born, the pure version of one of Franciacorta's historic grape varieties.
Vineyards of Origin: Three "chosen" Merlot vineyards, with an average age of 37 years, located in the municipalities of Cazzago San Martino and Passirano.
2015 Harvest: Beginning September 9th
Ilmerlot winemaking is the result of careful grape selection and expert vinification conducted in full compliance with the Ca' del Bosco Method. The bunches are washed and hydromassaged using three soaking tanks and a drying system.
Alcoholic fermentation and maceration were conducted for 21 days, carefully managing temperature and punching down.
The wine, raised from the floating tanks, is poured into the vat at a high flow rate to submerge the cap.
After racking, the still-warm wine is transferred into small oak barrels, 65% new, made from selected woods aged for at least 3 years.
The wine was aged for a total of 18 months, after which it was gravity-fed, naturally bottled.
Bottling December 20, 2016. Aged in bottle for 7 years.
Visually, it displays a deep garnet color.
On the nose, intense aromas of ripe fruit and spices intertwine, expressing themselves with remarkable intensity.
On the palate, it has excellent body, ample and enveloping, with a sip where complexity and finesse are enhanced by textured tannins.
Analytical data at bottling: Alcohol 13.5% ABV; pH 3.59; Total Acidity 4.30 grams/liter; Volatile Acidity 0.39 grams/liter. Sulfites: Total Sulfur Dioxide less than 28 milligrams/liter (maximum legal limit: 150 milligrams/liter).
