Production reduced in the vineyard to 60/70 quintals per hectare (from the 140 quintals allowed by the Classico regulations).
Five vineyards with different exposures and different altitudes from 220 to 380 msl. and different ages from 15 to 45 years.
The vineyards are in Certified Organic Cultivation (Organic Growing). - The different vineyards are vinified separately.
Manual harvest with soft pressing and selection of only the first pressing. No contact with the skins. The wines remain on the yeasts until spring.
Malolactic fermentation is not induced, allowing the wine to behave as it wants.
The vinification takes place in steel.
The bottling is always done by assembling wines from the different vineyards to ensure as much continuity of style as possible.
Organoleptic examination
Bright straw yellow color.
Delicate but persistent aroma, pleasantly fruity, hints of golden apple, almond, anise.
Pairings: excellent aperitif, fish pasta and risotto, fish broths, white meats, fresh cheeses.
The family has been involved in agriculture since 1700 and is originally from Montecarotto, one of the Castles of Jesi, in the Marche region.
It has always cultivated vines and olive groves only with organic techniques and for over 20 years certified in organic cultivation.
