Vinification and aging - The soft pressing-destemming is followed by the cooking of the must over a direct flame; with this procedure an average reduction equal to 1/3 of the initial volume of the must is obtained.
After cooking, the must is placed in oak barrels where a long period of fermentation begins with further refinement on the lees for at least 10 years.
After this minimum period, it is bottled in individually numbered bottles, relating to a single production lot. No sulphites are added to this wine.
