Vineyard at 230m / s.l.m. of altitude. Southern layout.
Grapes from the young vineyard (spurred cordon training) with a yield of 90ql per hectare, hand-picked and placed in small boxes. Harvest in late September or early October.
Overall fermentation of 10/15 days, in steel fermenters at a controlled temperature. Malolactic fermentation and elevation for 6/8 months in large wood or barrique.
Refinement in bottle for 6 months.
Ruby red color with violet reflections.
Aromas initially of fresh fruit, morello cherries (slightly sour wild cherries), currants, blueberries, followed by aromas of spices.
In the mouth good volume with well-present tannins, slightly silky and spicy, full on the palate with good persistence.
Pairing: with cold cuts, savory pie, meat-based first courses, eggs, poultry, rabbit in porchetta, baked fish.
Cellar equipped with modern and rational steel fermentation tanks, truncated cone fermentation vats in French oak, all at a controlled temperature for the vinification of quality red wines and small wooden barrels for the "élevage" of the wines undergoing refinement.
