Grapes grown organically. The vineyard is fertilized with legume green manure, organic fertilizer, and permanently grassed.
Vinification, maturation, and aging
Hand-harvested into crates, processed immediately.
Spontaneous alcoholic fermentation in steel tanks with indigenous yeasts and maceration lasting 30-35 days at a temperature of 28-30°C. Gentle pumping over and delestage are performed. Spontaneous malolactic fermentation.
Subsequently aged in 10 hl Slavonian oak barrels for 30-36 months and then in bottle for 24 months.

Tasting notes
Intense ruby red in color,
the nose presents enveloping notes of morello cherry, black cherry, and plum, elegantly integrated with the sweet notes deriving from the wood. A wine with a strong structure and dense, ample, elegant, and harmonious tannins.
"Ser Balduzio" has a long and persistent finish.
It is a wine to pair with elaborate, rich, and complex dishes. As it is not filtered, sediment may occur in the bottle.
The excellent meeting point between sea breezes and temperature variations of the Apennines contribute to determining an exclusive terroir that allows the production of fine wines.
