2022 Harvest. The red grape harvest began on August 30th and concluded on September 23rd.
Pinero is the fruit of careful grape selection and expert vinification conducted in full compliance with the Ca' del Bosco Method. Each individual bunch is washed and dried.
Alcoholic fermentation and maceration were conducted for 18 days, carefully managing temperature and punching down.
Pumping over was done daily using a pair of elevator tanks into which the wine, drawn from the bottom of the vat, was transferred by gravity.
After racking, the wine, still warm, was transferred into small oak barrels, 50% new, made from selected woods aged for at least 3 years.
The wine matured for a total of 11 months, after which it was bottled by gravity, naturally. Bottling July 4, 2023. Aged in bottle for 2 years and 8 months.
Intense ruby red, garnet nuances
Nose: Blackcurrant, blackberry, and blueberry aromas, lemon zest, and balsamic notes, with a background of mixed oriental spices
Elegant and full-bodied palate, with silky tannins and subtle freshness, and a spicy, berry finish
Analytical data at bottling: Alcohol 13.00% Vol.; pH 3.52; Total acidity 4.70 grams/liter; Volatile acidity 0.36 grams/liter.
Sulfites - Total sulfur dioxide less than 54 milligrams/liter
