Cimaio Marche IGT CasalFarneto white wine of remarkable structure and elegance, soft, enveloping, very pleasant, with particular aromatic notes.
Is produced in the hinterland of central Marche, in the company's own vineyards. The soil is of medium texture tending to loose, with a south-east exposure.
Harvest Overripe: The grapes, entirely attacked by "noble rot", are harvested in an advanced state of ripeness (late November, early December), when all the bunches have been enveloped by noble rot (botrytis cinerea). The wine produced will be of high structure, and enhanced in its softness and pleasantness.
The wine is obtained with the white vinification technique: the vinification process takes place half in small wood and half in steel.
Aging requires 6 months in steel and wood, then all in steel for another 6 months, and finally 12-18 months in the bottle.
Organoleptic examination
Yellow with golden reflections.
It expresses sweet hints of vanilla followed by ripe notes of quince, almond honey and spicy nuances.
In the mouth it highlights its large and enveloping structure, there are the fruity notes of the nose; mineral, bitter but round, soft, warm and savory. Very persistent.
Pairings: For meditation, excellent with very aged cheeses, or with very decisive and tasty dishes, first courses with cheese, fish broth, stockfish, excellent with dry cheeses, liver and foie gras.
