New from the Belisario winery: a low-alcohol white wine. It is not a dealcoholized wine, but it is created with this alcohol content.
*PIWI grapes, *Ritos 35% (a fungal-resistant variety) and Verdicchio.
Sipuò 9.5 is produced following the Belisario "I Cru" wine protocol.

Vineyards in the municipality of Matelica, San Venanzo district, 450 m above sea level, single-sided Guyot training system; vineyard in its sixth year of planting.

White vinification by reduction with must purification by flotation; fermentation at 16°C, maturation in stainless steel tanks at 13°C.
Fermentation yeasts: Saccharomyces cerevisiae sel celsius (low alcohol content and acidity preservative).
Alcohol 9.5% vol; pH 3.3; total SO2 95 mg/l; free SO2 40 mg/l; total acidity 8 g/l; malic acid 3.2 g/l; acetic acid 0.20 g/l; glucose/fructose 1.37 g/l.
This is a winemaking project aimed at producing a wine of high overall quality; the low alcohol content does not mean a lower cost because it involves a more demanding viticultural and oenological process: dedicated ripening curves, dedicated harvest, pneumatic pressing at 0.4 atm (50% grape/must yield), special yeasts, use of carbonic snow, reductive vinification and maturation, always stored at low temperatures to ensure microbiological perfection and tartaric stability.
Tasting Notes
Bright straw yellow color.
The intense aromas include more traditional notes of passion fruit, elderberry, grapefruit, and gooseberry, but also more distinctive notes, such as tomato leaf and bell pepper, conferred by the pyrazine molecules that compose the skin of this grape variety.
On the palate, flavors of orange zest with a good minerality and a slightly bitter finish, typical of this grape variety. A full-bodied yet lively wine.
Food Pairings: It pairs beautifully with light appetizers, fish dishes, white meats, and delicate cheeses. Its freshness and floral notes make it ideal for accompanying delicate dishes without overpowering them, such as vegetable appetizers or crostini with smoked salmon.
Please note: "Sipuò 9.5" can be drunk during meals (not on an empty stomach) to stay under 0.5% blood alcohol content:
Man 70 kg 560 ml; 80kg 640 ml; - woman 65kg 390 ml (so a bottle for two at a meal doesn't reach 0.5% blood alcohol content).
Verdicchi are typical because the system is unrepeatable and unreproducible: this is the value, the pride and the greatest responsibility: being a style, not a fashion.
