Vineyard at 230m / above sea level. Southern layout. Spurred cordon training.
Harvest carried out by hand allows the selection of grapes from young and old vineyards, the harvest takes place in the second, third decade of August, only the not yet ripe bunches that have a green stalk are collected, this is useful for having a must with a low alcohol content and good acidity and freshness.
Vinification by "direct pressing" of the grapes, the must is not in contact with the skins. It ferments and rests in steel for 40 days at a low temperature to avoid malolactic fermentation. Subsequently sugar and yeasts are added and bottled, where the refermentation takes place.
After a period of rest (at least 36 months) the remuage is done and subsequently the disgorgement with the addition of the product itself (without liqueur and sugars: pas dosè or zero dosage).
Refinement in the bottle not less than 3 months after disgorgement.
Organoleptic examination
Brilliant pale straw yellow color.
Aromas of citrus, pink grapefruit, peach and pink apple with balanced intensity, fine and young as an evolution.
In the mouth, fine and delicate bubble, intense with sensations of freshness, with good fullness and length.
Pairing: as an aperitif, with appetizers, fresh cheeses, shellfish, wine for the whole meal: white meats or even elaborate fish.
Cellar equipped with modern and rational steel fermentation tanks, truncated cone fermentation vats in French oak, all at a controlled temperature for the vinification of quality red wines and small wooden barrels for the "élevage" of the wines undergoing refinement.
